Brownie Cookies filled with Salted Caramel Creme

If you are a brownie fan, you will definitely LOVE this recipe.Its the perfect brownie soft center and chewy edge, but in the perfect portion, a cookie!!! The filling is indescribably good and lightweight. The recipe is extremely fast and easy to make.

For the brownie cookies we adapted a Martha Stewart recipe that she intended to be used forIce Cream Sandwiches.

You will need:

  • 9 ounces semi sweet chocolate, choppedImage
  • 3 ounces unsweetened chocolate, chopped
  • 1 cup all purpose flour
  • 1/4 teaspoon salt
  • 6 tablespoons unsalted butter
  • 1 cup granulated sugar
  • 3 large eggs
  • 1 teaspoon vanilla extract

OVEN TEMPERATURE: 375F.

  1. Line two large baking sheets with parchment paper; set aside. In a heatproof bowl set over (baño de maria) simmering water, melt chocolate and butter. Stir until smooth. Set mixture aside to cool slightly, about 5 minutes. Image
  2. With the paddle attachment on your stand mixer , beat chocolate mixture and sugar on medium speed until well combined. Add eggs, and mix until completely combined. Beat in vanilla. Add flour and salt, and beat until just incorporated. Image
  3. Using an ice-cream scoop about 2 inches in diameter, scoop dough into balls and place about 1 1/2 inches apart on prepared baking sheets. Bake,until edges are set and centers are still a bit soft, 9 to 11 minutes.

For the Filling:

You will need:

  • 1 cup butter (2 sticks)
  • 2 cups confectioners sugar
  • 1/4 teaspoon salt
  • 1/4 cup caramel sauce.

Place butter in a mixer and cream, then add sugar and salt and beat on slow until combined, and finally incorporate caramel sauce.

NOTE: WHEN YOU ADD THE FLOUR TO THE BROWNIES, LOWER THE SPEED OF THE MIXER OR ELSE YOU’LL BE REDECORATING YOUR KITCHEN. AND SOMETHING SIMILAR TO THIS WILL HAPPEN.
