Banana Cake Tutorial with Cinnamon Glaze!

This Sunday we were invited to a last minute brunch, and we really hate showing up empty handed to someone’s house. So we were searching through our cabinets for the easiest recipe, and one that we had all ingredients for, and the time for too! In record time we found a yellow cake mix at the back of our cupboard and were pensive about just making a yellow cake with buttercream frosting. We like original things that taste delicious, and brighten up someone’s day with our treats. But then inspiration struck as we saw 4 ripe bananas, and we came up with a recipe right there. We had never tried this before, but it payed off! And in just an hour we had a gorgeous baked banana cakes!

We truly love bananas, its our favorite fruit, we like them with chocolate, we like them with peanut butter, with dulce de leche, with yogurt, so why not with cake!?

For this recipe you will need:

  • Your choice of Yellow Cake Mix (and the ingredients called for on the box)
  • 4 ripe bananas
  • 1 extra banana for garnish
  • Butter and Flour for molds

Bake Time: Bake for ten more minutes than the time suggested on your cake mix. For example we baked for 40 minutes at 160 C.

For the Cinnamon icing:

  • 1 cup confectioner’s sugar
  • 2 tbsp milk
  • 1 tsp cinnamon

Follow the instructions listed on the cake mix box. Once done place in the refrigerator for 15 minutes. You can use this time to pureé the bananas, this can be done either with a fork or with a Immersion Blender (a handheld blender, bermixer). After this is done remove the cake mix and incorporate banana pureé. Before putting in molds make sure to butter and flour the molds. Once in molds place three thin banana slices in the center of the cake.

 

For the icing, just place sugar, milk, and cinnamon in bowl and with immersion blender mix until well combined, you should have a runny texture (and a delicious smell in your kitchen).  Divide icing into 2 parts, one much smaller than the other (1/3 of the icing) heat this up for 20 seconds in the microwave, and pour on the cakes just as they’re coming out of the oven. Let cool , and once the cakes are cooled, pour the rest of icing for a nice glaze.
