On Christmas Eve, you’ll probably be running around the house handling every detail, last minute gift shopping, last minute gift wrapping, cooking, decorating, and managing to make yourself look presentable by 8 o’clock. So we’ve decided to make your life easier! With the easiest recipe there is out there, no fuss at all. These mini pies are simply delicious and simple enough to follow any heavy traditional Christmas meal.
For this recipe you will need:
- 4 apples
- 2 tbsp butter
- 1 cup sugar
- 1/2 tsp cinnamon
- 1 cup of water
- 1 sheet of puff pastry (chilled)
*If you’re in even a bigger hurry you could use canned apple compote, it will work the same.
For the apple compote: Chop the apples into 1cm cubes. Place in a saucepan to medium heat along with the butter, sugar and cinnamon stir occasionally until the butter is melted. Then add half of the water, and let simmer for at least 15 minutes, adding more water if needed. Once your apples are really soft, remove from heat and puree them with a fork, your apples should break easily almost with no strength required, puree until you have an homogeneous mixture. Let Cool in the fridge.
For the Pies: Take your puff pastry sheet, and cut out about 3 inch squares, or size needed for your cupcake tin. Then place on tin. Then add about an ice cream scoop of compote to each pastry. Bake at 180 C for 15-20 minutes.
